Easy Steps for Preserving Fresh Peppers Year-Round

Roasting and freezing peppers is a simple process that locks in flavor, whether you're working with bell peppers or hot varieties. Follow these easy steps to roast peppers to perfection and store them for future use.

Instructions

  • Heat oven to broil or to its hottest setting.
  • Cut any pepper in half (green, red, orange or yellow bell peppers, hot peppers, etc.). Remove seeds.
  • Open up each pepper in half so that they are flattened.
  • Place the pepper halves flat, skin side up, on a baking sheet or pizza pan.
  • Roast until the peppers are blackened and charred (there is no set amount of time for this; you simply must watch).
  • Remove the peppers from the oven and flip them over to roast the opposite sides (optional).
  • After they are blackened on both sides, remove the peppers from the oven.
  • Place the roasted peppers on a baking sheet, pizza pan or platter and cover.
  • Allow the peppers to cool.
  • Place two pepper halves in one small freezer zip-top bag.
  • Continue to fill zip-top bags until finished.
  • Place the bags of roasted peppers in the freezer.
