Prepare the Salmon
1. Heat olive oil in a large skillet over medium-high heat.
2. Pat dry the salmon with a paper towel.
3. Lightly coat each piece of salmon with flour on all sides.
4. Place the salmon in the hot skillet and cook for four minutes on the top and bottom, then one minute on the sides.
5. Remove the salmon from the pan and set it aside while you prepare the sauce.
Prepare the Creamy Lemon Sauce
1. Melt the butter in a clean skillet.
2. Add the garlic and cook for one minute.
3. Whisk in 1 tablespoon of flour to make a paste.
4. Add 1/2 cup of chicken broth and whisk until smooth. Simmer on low heat for one minute to thicken.
5. Whisk in the lemon juice and Dijon mustard.
6. Slowly whisk in the cream, cheese and dill.
7. Place the salmon into the pan and sauce, allowing it to reheat for a few minutes.
8. Serve the salmon with sauce ladled over each piece. Garnish with minced dill.
